Welcome to our first World Journey episode! ✈️🍽️ This time, our couple lands in Munich, Germany — and instead of just tasting the food, they learn how to make it, straight from the people who've been perfecting it for generations. No recreating from memory back home. This time, they cook it there. 🍰 First stop: a Bavarian bakery, where a warm, mysterious secret bottle sparks a question — what's really inside a Black Forest Cake? A local pastry chef invites them behind the counter to find out, layer by layer, cherry by cherry, right down to the exact tradition behind the Kirsch. 🥩 Then, deeper into the market, a chance conversation about juniper berries and vinegar leads them to a family-run restaurant — and a second lesson, this time in Sauerbraten, Germany's slow-marinated, generations-old pot roast, served with Spätzle and Rotkohl. Two dishes. Two teachers. One journey through the food, history, and traditions of Bavaria. 🍰 Schwarzwälder Kirschtorte (Black Forest Cake) — Recipe For the chocolate sponge: 6 eggs 200g sugar 150g flour 50g cocoa powder 50g melted butter For the filling: 500g fresh or jarred sour cherries 3 tbsp sugar 1 tbsp cornstarch 4–6 tbsp Kirsch (cherry liqueur) For the cream: 750ml heavy whipping cream 3 tbsp powdered sugar 1 packet vanilla sugar (or 1 tsp vanilla extract) To decorate: Chocolate shavings Whole cherries Method: Bake the chocolate sponge, cool completely, then slice into three even layers. Soak each layer lightly with Kirsch. Cook the cherries with sugar and cornstarch until thickened, then cool. Whip the cream to stiff peaks. Layer sponge, cherries, and cream three times, coat the outside in whipped cream, then finish with chocolate shavings and whole cherries on top. 🥩 Sauerbraten with Spätzle and Rotkohl — Recipe For the marinade: 1kg beef roast (rump or chuck) 500ml red wine vinegar 500ml water 2 onions, sliced 2 carrots, sliced 8–10 juniper berries 6 whole cloves 3 bay leaves 1 tsp black peppercorns For the braise: 2 tbsp oil 2 tbsp flour 100g crushed gingerbread or gingersnap cookies (traditional thickener) Salt and pepper to taste Method: Combine marinade ingredients and submerge the beef for 3–5 days, refrigerated, turning occasionally. Remove the beef, pat dry, and sear in oil until browned. Strain the marinade vegetables and add to the pot with the beef. Add some of the marinade liquid and simmer, covered, for 2–3 hours until tender. Remove the meat, thicken the sauce with flour and crushed gingerbread, then slice and serve with Spätzle (soft egg noodles) and Rotkohl (braised red cabbage).
