Kolbászos pogácsa Ingredients: 4 cups (500 g) of all-purpose flour, little less than ½ pounds (200 g) of rice-mashed potatoes, ½ pound (230 g) of dry smoked sausage, little more than 2 sticks (230 g) of unsalted butter, little more than 1/2 cup (150 g) of sour cream, ½ cup (120 ml) of milk, 1 egg, 2 egg yolks, 15 g of salt, 1 tablespoon of instant yeast, 1 teaspoon of sugar Decoration: 1 eggs, 3.5 ounces (100 g) of grated cheese I was using a spicy, smoked "Csabai" sausage for this pogacsa. Cut the sausages to small pieces and put them into a food processor. Chop the pieces into small crumbs and set aside. Combine the yeast, sugar and the milk. Sprinkle a little flour on top and let it sit covered for 5-8 minutes. Mix the flour and salt. Crumble the room-temperature butter into the flour and add the rice-mashed cold potatoes the sausage crumbs, sour cream eggs and the risen yeast with the milk. Knead the ingredients into a dough. You will get a very sticky dough. Transfer the dough to a well-floured working surface and knead it for two more minutes. Put the dough into a floured bowl and sprinkle a little flour on top. Let it rest covered until it doubles in size. Roll out the dough into a rectangle( 18x18 inch, 45x45 cm) and fold it in three as you see it in the video. Let it rest covered for 20 minutes. Repeat these steps two more times and rest for 20 minutes between the foldings. Roll out the dough to 3/4 inch ( 1.8 cm) thick and score the top. With a cookie cutter (2.5 inches wide, 6.5 cm) cut out the scones. Knead the leftover dough together and do the same. Don't use small cutter, because the dough will rise a lot during baking and they might tumble over. Put the scones into a parchment paper-lined baking pan and rest them covered for 20 minutes. After resting brush with an egg and top with grated cheese. Bake it in a preheated oven 375 F 25-30 minutes. Letakarva pihentetjük a tésztát 20 percig.
