For me, it is this intense milky scent from Rushan cheese, which cannot be produced by machines yet! The old saying “18 Odds of Yunnan, milk in pieces for sale” refers to Rushan cheese from Dali! It is made of fresh milk and its naturally fermented sour liquid. The proteins in milk (mostly casein) denatures and starts to form solid clumps. Use a wooden stick to mix gently and squeeze the mixture into a diary dough with hands. Take the dairy dough out and press into round shapes. Then use two sticks and twist them into longer shapes. Pull triangles out of the edge of each end and twine the pieces around bamboo trapezoid drying shelves. Sun-dried Rushan cheese has an intense milky scent.
