KORHELY SOUP INGREDIENTS 2.5 pounds (1.2 kg) of sauerkraut, 2 tablespoons of oil, 3.5 ounces (100 g) of smoked bacon/ lardon, 5 ounces (150 g) of smoked meaty bacon (Kolozsvari szalonna), ½ pound (220 g) of smoked sausage, 1 ham hock ( 1.5 kg), 2 onions, 5-6 cloves of chopped garlic, salt, 1 teaspoon of black pepper, ½ teaspoon of whole caraway seeds, 2-3 tablespoons of paprika powder, 3-5 bay leaves, about 10-12 cups (2.5-2.8 liters) of water, 4 cups ( 1 L) of chicken stock Thickening: 1 cup ( 240 ml) of sour cream mixed with 2 heaping tablespoons of flour 1 clove of garlic This recipe yields in a generous amount of soup, you may want to cut the ingredients in half. First cook the ham hock in water until tender. Let it cool down to room temperature and debone the meat. Save the cooking liquid: we will use it later. Rinse the sauerkraut if you find it too salty or sour. Fry the bacon / lardon in oil, then add the meaty bacon and fry it until crisp. Add the bay leaves and caraway seeds and fry them for a couple of seconds. Add onions and garlic. Sauté the onions until translucent, then place sliced sausage in and add the paprika powder. Add the chopped sauerkraut to the soup, then pour in the ham’s cooking liquid and chicken stock (or water). Season with black pepper generously. Add salt only near the end because the sauerkraut is already salty. Bring up to a boil, and add the chopped ham hock. Taste the soup: if it needs more seasoning, feel free to add more bay leaves, salt and pepper. Cook the soup until everything is tender. Make the thickener by mixing the flour, sour cream and pressed garlic. Ladle a little soup into the sour cream to temper it, and pour the sour cream into the soup. Cook for another 5 minutes by stirring frequently. At the end, taste the soup and if necessary, add more salt and pepper. Korhely soup is the best when it is served hot, with fresh bread, and lots of sour cream on top! Főzzük a levest addig amíg minden megpuhul.
