CHEESE POGÁCSA INGREDIENTS 4¾ cups (600 g) of all-purpose flour, 2¼ sticks (250 g) of room-temperature butter, 3 egg yolks, 1½ cups (350 g) of sour cream, 1 ounce (30 ml) of milk, ½ teaspoon of sugar, 5 ounces (150 g) of finely-grated cheese, 15 g of salt, 1 heaping tablespoon of instant yeast Topping: 3 ounces (90 g) of grated cheese, 1 egg for brushing the dough Mix the instant yeast and sugar with ½ cup (120 ml) of lukewarm sour cream and let it proof. Add the egg yolks and the milk to the risen yeast-sour cream mixture. Combine the salt with the flour, and add soft (but not melted) butter, and the grated cheese. Add the rest of the sour cream and the risen yeast with the sour cream. Knead the ingredients into a dough, and tansfer it to a well-floured working surface and knead it for 3 more minutes. Place the dough into a floured bowl, cover with a plastic warp, and let it rest in a warm place for an hour. After resting transfer the dough to a floured surface and gently knead it for a couple of seconds, form a ball and cover with a kitchen towel. Let it rest for 15 minutes. Roll out the dough into a round shape, approximately 3/4 inch thick. Score the top with a knife and cut out the scones. I recommend using a water glass for the cutting instead of metal cookie cutter. By doing this way, your pogacsa will be cut out evenly, and during baking the pogacsa has less chance to thumble over in the pan. Make sure you apply an even pressure on the glass when you cut out the scones. Try to use a glass which is at least two inches wide. If you use a smaller glass, the scones may tumble over in the pan. Place the scones on a lined baking pan. Cover the pan and let it rest for 15 minutes. Brush the top with the egg, and sprinkle grated cheese on top. Put the baking pan in the fridge for 15 minutes. We want the pogacsa dough to cool down a little, so it won’t thumble over during baking. Bake the pogacsa for approximately 23-25 minutes in a preheated 375 °F (190 °C) oven or until the pogacsa turns golden brown. I recommend using a digital kitchen scale for this recipe.
