Ingredients for the stuffing: 1. 5 pounds (650 g) of ground pork, 4.5 ounces (130 g) of smoked uncooked bacon, 1 small onion, 3 cloves of garlic, 1 teaspoon of paprika powder, 5 ounces (150 g) of 2-day-old stale bread, 1 egg, 1/2 teaspoon of salt, 1 teaspoon of black pepper, 1/3 teaspoon of ground caraway seed Ingredients for the potatoes: 2.5 pounds (1.2 kg) of peeled potatoes, 1.5 ounces (50 ml) of oil, 2 cloves of garlic, 1 teaspoon of salt, 1 teaspoon of black pepper, 1/3 teaspoon of ground caraway seed Other ingredients: less than 1.5 pounds (600 g) of sauerkraut, 1/2 teaspoon of black pepper, 1/3 teaspoon of ground caraway seed, 1 package of sliced bacon Taste the sauerkraut. If it is too sour rinse it in cold water. We will make a well-seasoned filling, this is the most important part. Fry the chopped bacon in a little oil until translucent. Add the onions and garlic and fry it until translucent. Add the paprika powder, give it a good stir and let it cool down to room temperature. Soak the bread in water, and squeeze out. Combine the ground pork with the onion- bacon mixture. Add the soaked and squeezed bread and the egg. Season with ground caraway seed, salt and pepper. Combine the filling thoroughly. Place a handful of the filling on each bacon and roll up as you see it on the video. Combine the oil with the paprika powder, ground caraway seeds, pressed garlic, salt and pepper. Peel and slice the potatoes to 3-4 mm thick. Boil the potatoes in salty water for 12-15 minutes, then transfer them into a baking dish. Spread the oil over the potatoes. Season the sauerkraut with ground caraway seed and black pepper. Spread the sauerkraut over the potatoes. Put the meat on top of the sauerkraut and roast it in a preheated 360-365F oven for approximately an hour. Serve the dish with sour cream and fresh bread.
