INGREDIENTS 4¾ cups (600 g) of flour, a little less than 1½ cups (330-350 ml) of warm milk mixed with 1 tablespoon of instant yeast, 1 egg, 3 tablespoons of granulated sugar, 2½ ounces (80 g) of melted butter, a pinch of salt, 1 egg for brushing the dough Filling: 1 pound+2 ounces (500 g) of unsalted dry-pressed cottage cheese, 2 tablespoons of semolina #2, 4-6 tablespoons of granulated sugar, 2 egg yolks, 2 beaten egg whites, 2 small packets (2x9 g) of vanilla sugar, the zest of two lemons, raisins as you'd like Combine the warm milk with the sugar and yeast. Sprinkle a little flour on top and cover with a plate. Let it proof. Add the salt to the flour, the egg and the risen yeast with the milk. When the ingredients start to form a ball, add the melted butter and knead it until the dough separates from the side of the bowl. Transfer the dough to a floured surface and knead it for one more minute. Place the dough in a floured bowl and sprinkle the top with flour. Cover with a plastic wrap and let it rest until it doubles in size. Mix the cottage cheese, semolina, sugar, vanilla sugar, lemon zest, raisins and the egg yolk in a bowl. Beat the egg whites until firm peaks form, then gently fold into the cottage cheese. Taste the filling. If it is not sweet enough, add more sugar. I don’t prefer my breakfast pastries too sweet. Roll the dough out with a rolling pin to about ⅛ inch (3-4 mm) thick and cut into 4x4-inch (10x10 cm) squares. Put a heaping tablespoon of filling on each one, fold and pinch all four corners together, and give them a twist to seal the packets. The bundles won’t open if you wet the corners with a small amount of water before pinching them together. Place them on a lined baking tray, cover with a damp cloth, and let the bundles rest for 20 minutes. While you are waiting for the packets to rise, preheat the oven to 355 °F (180 °C). Once the dough has risen, lightly glaze each packet with beaten egg, and bake in the oven for 18-20 minutes. Allow them to cool down on a wire rack, and sprinkle with some icing sugar. Állítsuk össze a túró tölteléket.
